Net fruity with aromas of wild strawberries and…Garnet red with ruby hues. Intense and clean scents of roses, vanilla, roasted hazelnuts, licorice, tobacco and cinnamon. Fruity scents of strawberries and mulberries. Full and elegant flavour with a good body recurring olfactory sensations. The perfectly blended hints of fruits and wood are extremely appealing. With its big structure this wine is a perfect match for main courses of red meats, braised dishes and game in general. Also ideal pairing with cheeses.

VARIETY: 100% Nebbiolo – Michet

PRODUCTION AREA: Monforte d’Alba – Castelletto subzone. Type Elveziano Land (emerged seabed, formed in the late Miocene, 10 to 12 million years ago) of medium texture (silt, clay and sand in balanced percentages), rich in minerals and limestone.

CULTIVATION OF THE VINEYARD: Low Guyot system on hills with good inclines (40-50%) with south-est exposure.

YIELD: 45 hectoliters.

VINIFICATION: Soft pressing of the hand-harvested grapes with destalking, followed by fermentation in temperature controlled tanks at 30/32 degrees C (86/88 F). The skins are macerated for 10 days and the wine is racked when fermentation has been completed.

AGING: Immediately after the malolactic fermentation, which took place in December, the wine was put into oak barrels, partly new and partly already used for earlier harvests. Decanted once a year, after 24 months has been assembled in concrete tanks where, after a break of six months or so for a further natural stabilization before being bottled during the summer. Ages in the bottle a further six months before release.

CULINARY COMBINATIONS: a wine of great structure, well suited to red meats, braised dishes and game in general. And ‘ideal accompaniment for cheeses.

SERVING TEMPERATURE: 18 degrees

SUMMARY: Also in this wine Nebbiolo is lord and master. Harvested by hand and aged in oak barrels of one and two years old. After 24 months, the wine is transferred to a cement cistern for further aging for six months. This is a wine to unpack at your party!
